Here are the important points about refined carbohydrate metabolism:

1. The blood sugar level rose too quickly.

2. The stress on the pancreas was too great.

3. The level of insulin and sugar climbed too high.

4. The insulin level remained elevated for too long.

The bottom line is that the normal metabolism of natural sugars such as those found in fruits and other natural foods is a smooth, even, well-regulated process.

While the metabolism of refined sugars is chaotic, unnatural, stresses the body in numerous ways and causes the level of insulin in the blood to rise and fall in an abnormal “roller-coaster” fashion.
